Ingredients:

4 (6-ounce) halibut fillets (about 1 inch thick)
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 shallot, thinly sliced
1/4 cup fresh salsa, divided
1 (9-ounce) package or container of artichoke hearts
1 lemon, thinly sliced

Directions:

Preheat your oven to 400 degrees. Sprinkle the halibut fillets moderately with salt and pepper. Cut parchment paper in four 15-inch squares and fold the squares in half. Inside each parchment packet place shallots, one halibut fillet and one tablespoon of salsa. Place the artichoke hearts and lemon slices on top of each fillet. Put the packets on a baking sheet and bake for 15 minutes at 400 degrees or until your oven thermometer reaches 140-145 degrees when inserted through a packet and into a fillet.
